Chocolate pudding recipe

We've just come back from Snowboarding in Austria. The snow was really bad today and very icy and I fell a lot so that I have bruises all over my body and don't know how to move or sit without pain. I've read an article saying that chocolate makes you happy, so that's what I'm trying right now to forget the pain. :)

This is the chocolate pudding I just made:

Here is what you need

50 gram chocolate (you can choose whole milk chocolate or dark chocolate)
500 ml whole milk
1 table spoon natural cocoa powder
1 teaspoon pure vanilla extract
1 table spoon (if you like it sweeter add 1-2 more table spoons sugar)
35 gram cornstarch

If you like:
250 millilitre cream

Chop the chocolate (not too fine). Put half of the milk in a nonreactive saucepan, bring to simmer and let the chopped chocolte melt in it. Meanwhile, whisk the remaining 1/2  of the milk, cocoa powder, sugar, vanilla extract and cornstarch in a bowl.

Add the mix to the saucepan and cook over medium-high heat whisking constantly, until the pudding comes to a full boil and gets a thicker consistency. Pour the pudding into 4-6 small bowls. Cover with plastic wrap and ideally refrigerate for at least 4 hours. ( I often eat it earlier, like today :))

I didn't have cream at home, but if you have it, it's delicious: Just before serving whip the cream with a mixer and add some vanilla sugar. Take care not to over-beat the cream or it will be grainy or in the last stadium butter :). Serve each pudding with whipped cream on top.

Kram,

Isabell
